Slow Cooker Carnitas Recipe

Hey girls,



Found a recipe that looks really simple and yummy!! I've always wanted to learn how to make homemade carnitas. I hope it's authentic tasting!

Before I give you the recipe, how did you all like the "creamy chicken with noodles"? We just finished the last of it today after church! That meal really stretched and everyone who ate it seemed pleased. Just so you know, I really like to make chicken in my crockpot!! I guess it's because it just seems like it usually turns out good. But, I don't want to bore you guys with my selfish wants, SO if you have recipes that will challenge my palate...Please pass it on to me!!



Here goes this weeks recipe:

Slow Cooker Carnitas Recipe

You will need:

2 pounds pork shoulder [ have no idea what that means :)]

1/2 co freshly squeezed orange juice ( about 1 large orange) FYI...I have an orange tree if u need an orange.

1/4 cup freshly squeezed lime juice (about 1 large lime) Anyone got a lime tree???

7 cloves garlic (whole intact) I will use my minced in the fridge

1/2 tablespoons kosher salt

1 tablespoon cumin

1/2 cup beef broth

Also:

Corn tortilllas, sour cream, salsa, sliced avocado



The Directions:

Use a 6 quart cooker. In small bowl, combine the salt and cumin. Run mixture all over pork, then PLOP it into the slow cooker. Add whole garlic cloves. Squeeze on the citrus, and pour the beef broth evenly over the top.



Cook on low for 8-10 hours, or until pork shreds quite easily with fork. Serve warm on corn tortillas.

Hey Crockpot Friends,

So what did ya think?? This recipe came from my Campbell's Soup Cookbook. I thought it was yummy!! I shredded the chicken and mixed it in a bowl with sauce and carrots from the crockpot. I also added mozzarella cheese. I took it to my MOPS group and had more that feed my family and now my hubby has leftovers for tomorrow. Everyone is happy!!

Today Christi and I finally made our "CROCKPOT DIVA" aprons. Or should I say my sister's and Christi's say "Crockpot Diva", but mine says "crockp... Diva. If you know Christi you can ask her about that one!! :) We had fun anyway!! If you want to come over on any given Thursday, just show up!! You don't have to call if you can't make it, LIFE happens! Really the idea here is to make life a little easier by having a recipe handed to you with as little thought on your part as possible! And if you become a "Crockpot Groupie" YOU TOO can have a snazzy APRON of your own!! Heehee! It's late and I am off to snuggle my sweetheart.

Hello Crockpot Thursday friends,

It is finally up and running our very own BLOG, which will have all the recipes we use each Thursday ready and waiting for you to use to Serve your family and friends!! Please be sure to check it each week. I will be posting recipes and directions each Monday or Tuesday to give you time to gather all the ingredients. I usually choose recipe with items found in moxt of our pantries or cupboards. If any one has a recipe to share, Please share it! I'm always looking for Quick and Easy recipes to use each week. Last week we used a recipe given to me by Alicia Alvarez, it was Dr. Pepper Pork Chops. My family enjoyed it!! My hubby actually took the leftovers for his lunch today. Please let me know how you liked each recipe that way I know to keep it or ditch it!! I will try all recipes once. Below is the recipe we will use this Thursday.

Golden Chicken with Noodles
Prep: 5 min.
Cook: 7 hours

You will need:
2 cans Campbell's Condensed Cream of Chicken Soup (any cream of something will do)
1/2 cup water
1/4 cup lemon juice
1 tablespoon Dijon-style mustard
1 1/2 teaspoons garlic powder
8 large carrots, thickly sliced (about 6 cups) I use baby carrots in the bag
8 skinless, boneless chicken breast (use the amoount of chicken that meets your families needs)
1/2 of a 12oz package egg noodles (about 4 cups) I will use whatever pasta I have in the pantry
Chopped fresh parsley

Directions:
1. Stir the soup, water, lemon juice, mustard, garlic powder and carrots in crockpot. Add chicken and turn to coat.
2. Cover and cook on LOW for 7 to 8 hours, or until chicken is cooked through. Serve with the noodles. Sprinkle with parsley.
